Guilt is the last thing you should feel after eating any food! If you love subs and sandwiches then avoiding the refined flour in the bread is one good hack to keep your meal/snack healthy. Try this cucumber sub, a crunchy and healthy alternative to regular sandwiches and subs.

Ingredients:

(makes 1 serving)

  • 1 medium size cucumber 

  • ½ cup crushed paneer/boiled and shredded chicken 

  • ½ tsp mixed herbs

  • 1 tsp mustard sauce 

  • To taste tabasco sauce  

  • 1 tbsp olive oil 

  • 1 tbsp black olives (finely chopped) 

  • Salt, to taste 


How to prepare:

  1. Mix the paneer/chicken, olive oil, mustard, salt and herbs into a fine paste

  2. Peel the cucumber, cut off the edges, and slit it lengthwise in half

  3. Scoop out the seeds and soft pulp using a spoon

  4. Fill both cucumber halves with the paneer/chicken filling

  5. Garnish with Tabasco and finely chopped black olives

  6. Cut into 1.5” wedges and enjoy!
