Ingredients:

(makes 2 servings)

  • 2 tbsp cabbage (shredded)

  • ½ onion (finely chopped)

  • 2 tbsp beans (finely chopped)

  • 2 tbsp sweet corn

  • ½ carrot (finely chopped)

  • 2 tbsp coriander stem (finely chopped)

  • 2 clove garlic (finely chopped)

  • 1 inch ginger (finely chopped)

  • 2 tsp oil

  • 3 cup water

  • ½ tsp salt

  • ½ tsp pepper powder

  • 1 tbsp rice flour

  • 3 tbsp coriander (finely chopped)

  • 2 tbsp lemon juice


How to prepare:

  1. Heat 2 tsp oil in a large deep pan and then saute the garlic cloves and ginger

  2. Add in the chopped onion and coriander stem and saute for a minute in the same pan

  3. Now add the carrot, cabbage, beans, and sweet corn and saute for another minute without overcooking

  4. Add the water, salt and pepper powder, and boil well for 5 minutes while stirring occasionally

  5. Prepare the rice flour slurry by mixing the rice flour with a ¼ cup water and making sure to smoothen out all the lumps

  6. Pour the prepared slurry into the soup and mix well

  7. Boil for 2 minutes, making sure the flavors are well combined

  8. Turn off the flame and mix in half the coriander leaves and lemon juice, mix well

  9. Finally, garnish with the remaining coriander leaves and enjoy
