This spinach soup packs a real punch! It’s full of fiber, iron, folic acid and antioxidants. It will keep you satiated longer, improve your cellular and gut health, and even fight free radical skin damage, all at the same time!

3 cups spinach (chopped)
½ cup onion (chopped)
1 tsp garlic (grated)
1 cup low fat milk
1 tbsp olive oil
to taste salt
1 ½ cup water
How to prepare:
Heat the oil in a deep non-stick pan, add the garlic and onions and sauté on a medium flame for 1 minute or until the onions turn translucent.
Add the spinach and sauté on a medium flame for 2 minutes.
Add 1 ½ cups of water, mix well and bring to a boil, while stirring.
Let cool and blend in a mixer until smooth.
Transfer the mixture into a deep non-stick pan, add the milk, salt and pepper, mix well and cook on a medium flame for 2-minutes, while stirring occasionally
